Tape A2* protein is the original milk protein of natural origin, and is the affinity protein in natural milk. The first breathing cows produce milk that contains Tape A2* protein. Later, a genetic mutation occurred in the cow, and a variant of the A1-type protein appeared. At present, purebred A2 cows only account for about 30% of western dairy cows, so the proportion of source milk containing the remaining A2-type protein is equivalent.
